“MY HUSBAND, RONNIE, ADORES CUCUMBERS!!!! “Your love for cucumbers… that ain’t right,” I sometimes tell him. This dish is so delicious that I’m looking for leftovers in the fridge! I’m going to cook it for my sister the next time she comes to visit; it might even raise her eyebrows. This dish deserves two cucumbers! “A little ranch would be nice.”

“All year long, I make a salad similar to this (but with less pepper).” I prefer apple cider vinegar or white balsamic vinegar, which have more tang, to the very mild white vinegar, but this is a personal taste. three medium cucumbers, peeled and sliced a quarter-inch thick
1 medium onion, peeled and sliced into rings
3 medium tomatoes, peeled and cut into wedges
a half-cup vinegar
a quarter cup of sugar
1 cup of water
2 tsp sea salt
1 teaspoon freshly ground coarse black pepper
a quarter cup of oil

In a large mixing bowl, combine all of the ingredients and well combine.
Refrigerate for at least 2 hours prior to serving.\
